Chicken Gnocchi Soup

It is soup season and my husbands favorite soup that I make is a copy cat of Olive Gardens Chicken Gnocchi Soup. He will eat a whole pot in a day if I would let him. I have had a lot of my friends ask me how I make it. Today I decided to be formal and write it out for you all to enjoy!

INGREDIENTS:

1 Stick of Butter
1 Tablespoons olive oil
1 Onion, diced
3 Carrots, shredded
3 Celery, diced
4 Tablespoons Garlic
coarse salt and fresh black pepper
3 Tablespoon all-purpose Flour
48 oz Chicken Broth
1 Pint half & half
3 Chicken breast pre cooked, cut into small bites
1 Package of Gnocchi
I bag of fresh baby spinach, chopped
1 Tablespoon Basil to taste

INSTRUCTIONS:

  1. In a large soup pot heat the butter and oil together over medium heat. Add onion, carrots, celery and garlic. Season with salt, pepper and basil. Cook until tender over medium-low heat about 10 minutes, stirring often.
  2. Sprinkle the flour into the pot and stir into the vegetables, stirring often till into a paste. Stir in the half and half 1 cup at a time, followed by the chicken stock.
  3. Add the cooked chicken. Bring up to a simmer and maintain for 20 minutes stirring often. Season with salt and pepper to taste.
  4. Add the Gnocchi. Still occasionally. The Gnocchi will float to the top when cooked. Follow with the fresh spinach. The spinach will also cook its self.
  5. Serve with bread, enjoy!

Amber’s Famous Mac & Cheese

The moment you have all ben waiting for, My Mac and Cheese recipe. love to cook and one of everyone’s favorite thing for me to make is Mac & Cheese. It is not out of the box. I go all out. Some times I make it too spicy that Brianna does not like it. The last few times I made it just right for here. Go me!

All of my friends have been dying for this recipe because it is that good. Well, Here it is!

 

ingredients 

  • 2 pound elbow macaroni
  • Salt and freshly ground black pepper
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • 1 tablespoon green tabasco sauce
  • 1 tablespoon stone ground mustard
  • 3 cups grated sharp cheddar cheese

Preparation 

Pre-heat oven to 400°F

Place a large pot of water over high heat and bring it up to a boil to cook the pasta.  Once pasta is cooked, strain and put aside

While the pasta is cooking, heat a medium-size skillet over medium heat and add the butter.  When the butter melts, add the flour and cook till it is a paste.  Whisk in milk  slowly making it into a nice soupy mixture. Stir in the cheese slowly in a figure-eight motion, reserving enough to sprinkle on the top of the casserole, until it’s all melted. Fold in the mustard and tabasco, and season with salt and pepper to taste.

When the pasta is done, make sure its is drained well and combine past with cheese sauce. Pour into a casserole dish and top with the remaining cheese. Bake in oven until cheese is brown and bubbling.

Sweet & Tangy Meatloaf

I am a big meatloaf lover. It is probably one of those “hurry what is for dinner” meals. My best friend and I will always get together and make dinner for our families. We will both arrange who makes what. One of our favorite things is my home made Mac and Cheese with her Meatloaf. After the second time she made the meatloaf, I asked her for the recipe. As for now, I am sharing the most amazing meatloaf recipe you will come across!

2 lbs ground beef

1/2 tsp Mustard

1/3  cup Ketchup

1 egg

1/3 cup oatmeal

1/2 tsp salt & peper

1 beef onion soup package (I use lipton)

Glaze

1/3 cup ketchup

1 tsp minced garlic

1 Tbsp  worcheshire sauce

1/2 cup brown sugar

Preheat oven to 350

Mix all ingredients together in a large bowl. Once everything is mixed place in a casserole dish and top off with the glaze

-some times I will double the glaze recipe to have more sauce to go with it.

cook for an hour.
